If a recipe is good, make more of it. One of my favorites here is the original Keto Mug Cake, so naturally I created variations. The first is this Keto Blueberry Pancake Mug Cake — a simple tweak and the addition of blueberries turns the classic into a fruity, pancake-like treat.

With just a few ingredients and a minute in the microwave, you’ll have a low-carb treat that satisfies a fruit craving without knocking you out of ketosis. Top it with butter, a sugar-free maple-flavored syrup, or a quick glaze icing (recipe in the notes).

Keto Blueberry Mug Cake Ingredients

Exact ingredient quantities are in the recipe card below.

Recommended coconut flour: TerraSoul (light and fresh).

Recommended sweetener: Swerve Confectioners — a sugar alcohol sweetener that measures like powdered sugar and can be subtracted from net carbs.

Other ingredients:

  • Butter (or coconut oil for dairy-free)
  • Baking powder
  • Vanilla extract
  • Large egg
  • Blueberries
  • Optional: sugar-free maple syrup or a simple glaze (see Notes)
  • Optional: unsweetened almond or coconut milk (for the glaze)

Melt the butter in a microwave-safe mug or ramekin. Stir in the vanilla and the egg until combined. In a separate small bowl, whisk together the coconut flour, Swerve Confectioners, and baking powder. Add the dry ingredients to the wet and mix thoroughly. Fold in the blueberries.

Microwave the mug or ramekin on high for one minute. Carefully lift the cooked mug cake with a fork and flip it over; if the bottom needs another few seconds to finish, return it to the microwave briefly. Ramekins and mugs give slightly different shapes, but both are delicious.

How to Top Your Keto Blueberry Mug Cake

  • The most pancake-like finish: a pat of butter and a sugar-free maple syrup.
  • Coconut oil also makes a tasty, simple topping.
  • Simple glaze: for one mug cake, mix 1 1/2 tbsp Swerve Confectioners with 1 tsp unsweetened almond or coconut milk and drizzle over the top.
