This Chicken Caesar Bruschetta makes a great appetizer, snack, or light dinner. The chicken salad is tangy and creamy—delicious served on toast or on its own.
Ingredients
- 1 pound shredded, cooked chicken
- 1 baguette, sliced into 1/2″ rounds
- 1/4 cup olive oil
- Kosher salt and black pepper
- Shredded lettuce
- Shredded Parmesan cheese
- Creamy Caesar Dressing (homemade or store-bought)
Instructions
- Preheat the oven to 400°F (200°C).
- In a medium bowl, toss the shredded chicken with about 1/2 cup of Caesar dressing. Adjust the amount to taste, season with salt and pepper if needed, then cover and refrigerate for at least 30 minutes.
