Matcha-Dusted Chocolate Almonds — 3 Ingredients, Vegan & Gluten-Free

Irresistible Matcha Dusted Chocolate Almonds!

Inspired by classic cocoa-dusted almonds, these Matcha Dusted Chocolate Almonds are a simple snack that delivers a perfectly balanced sweet-bitter flavor and a satisfying crunch. What began as a little experiment turned into a favorite treat I couldn’t stop eating.

Matcha Dusted Chocolate Almonds

This recipe is ideal for matcha fans and anyone who prefers desserts that aren’t overly sweet. The natural bitterness of ceremonial matcha paired with dark chocolate keeps the sweetness restrained, while the crunchy almond center gives a delightful contrast in texture.

The recipe is surprisingly simple: just three main ingredients (plus an optional pinch of salt). You can melt the chocolate in the microwave or with a stovetop bain-marie — whichever you prefer. The process takes a bit of time, but it’s meditative and the result is worth the effort.

These Matcha Dusted Chocolate Almonds are vegan, gluten free, and refined sugar free, and can be made oil-free if you choose an oil-free dark chocolate.

What you need

  • Almonds → The crunchy base. You can substitute pistachios, cashews, or other nuts or large seeds, but larger nuts make the coating process easier.
  • Dark chocolate → Use a dairy-free dark chocolate if needed. Bars or quality chocolate chips work best because they melt and set firmly at room temperature.
  • Ceremonial grade matcha powder → Use ceremonial grade matcha for the best flavor and bright color when dusting the finished almonds.

You can finish the batch with a light sprinkle of flaky sea salt if you like a sweet-salty contrast.

Secrets to success

Choose a good quality chocolate bar rather than trying to recreate chocolate from cacao powder and oil. Using real chocolate helps the coating set firmly and keeps the almonds from becoming soft at room temperature.

Store these in an airtight container to avoid messy matcha dust transfer. They can be a little messy to handle—think green “dusty” fingers—so keep them separated when possible.

A bright balance of matcha, dark chocolate, and crunchy almonds—vegan, gluten free, and refined sugar free.

Ingredients

  • 1 cup almonds raw or lightly toasted
  • 1 1/2 cups dark chocolate chunks chips or broken chocolate bar
  • 2 tsp ceremonial grade matcha powder more as needed

Instructions

  • Melt the chocolate using a microwave in 30-second intervals, stirring between heats, or melt gently over a bain-marie until smooth.
  • Line a baking tray with parchment paper or a nonstick baking mat and set aside.
  • Stir the almonds into the melted chocolate to coat them evenly. Use two forks to lift almonds out, letting excess chocolate drip back into the bowl, then place each almond on the prepared tray. Leave space so they don’t stick together.
  • Chill the coated almonds in the refrigerator for about 30 minutes until the chocolate is fully set. Dust with matcha using a fine sifter or powdered sugar duster. For even coating, lift the parchment paper and gently toss the almonds, or place them in a lidded container and shake with matcha powder until evenly covered.

Notes

  • To make these oil-free, choose a dark chocolate that contains no added oils.
