This version is inspired by my sister-in-law — the fried garlic and toasted almonds are the stars. I often make this recipe just to enjoy the garlicky crisps; the green beans are a delicious vehicle for them.

Fried Garlic and Almond Green Beans

Super simple to prepare. There are just a few main ingredients, but a couple of tips help ensure the best texture and flavor.

Recipe Notes

  • I often buy trimmed, washed green beans to save time. Fresh beans give the best texture, but you can use frozen if needed. Steam or blanch frozen beans briefly before proceeding.
  • Slice the garlic slightly thick so it browns without burning. Thin slices will crisp too quickly and can turn bitter.
  • The almonds and garlic can be prepared ahead and combined with warm green beans just before serving.

Fried Garlic and Almond Green Beans

Ingredients

  • 3 cups green beans, trimmed and blanched
  • 3 cloves garlic peeled and sliced
  • 1/4 cup sliced almonds
  • 2 Tablespoon olive oil
  • salt and pepper to taste

Instructions

  • Heat a large, high-sided pan over medium heat. Add the sliced almonds and toast, stirring frequently, until they begin to brown, about 2–3 minutes.
  • Remove the almonds from the pan and set aside.
  • Add the olive oil to the pan and return to medium heat.
  • Add the sliced garlic and fry until it starts to turn golden, about 2–3 minutes. Remove the garlic and set aside with the almonds.
  • Add the blanched green beans to the pan and toss in the remaining oil, heating for about 3 minutes until warmed through.
  • Turn off the heat. Add the fried garlic and toasted almonds to the green beans and toss gently to combine.
  • Season with salt and pepper to taste and serve warm.

Notes

Garlic and almonds can be prepared ahead of time and stored separately. Toss them with warm green beans just before serving for best texture.
