Tropical 5-Fruit Smoothie with Coconut & Lemon Greek Yogurt

 

Wow — this heatwave needs to take a long walk and cool off in the lake! I definitely felt the urge to escape the heat when I dashed outside and snapped a few photos. Even the birds were quiet, the butterflies and ants seemed to be the only ones enjoying the warmth, and the ferns leaned gratefully into every breeze. With this hot spell sticking around all week, smoothies are my go-to: quick, healthy, and utterly refreshing.

I froze fresh pineapple yesterday, which added a bright tropical flavor alongside frozen banana and strawberries. Blended with creamy lemon Greek yogurt, pineapple-orange juice, sweet flaked coconut, a touch of honey, and a splash of vanilla, this smoothie turned out silky and almost milkshake-like — pure paradise in a glass. I considered a splash of rum, but it wasn’t noon yet — maybe next time. Imagine this served at an oceanside tiki bar with a paper umbrella and a wedge of pineapple; close your eyes and you’re there.

TROPICAL PARADISE 5-FRUIT SMOOTHIE with COCONUT & LEMON-FLAVORED GREEK YOGURT

Ingredients

1 frozen banana, peeled and cut into 2″ pieces

1/2 rounded cup frozen strawberries

1/2 rounded cup frozen pineapple chunks

1 tablespoon honey

1/4 cup packed sweetened flaked coconut

1 — 6 oz container lemon-flavored Greek yogurt (such as Chobani)

1 teaspoon vanilla extract

1 — 6 oz can pineapple-orange juice

 

Directions

Place all ingredients into a blender in the order listed. Blend on high until completely smooth and creamy. Pour into two large glasses, garnish the rims with fresh fruit if desired, and serve with straws.
