Why You Will Love This Recipe
Members of the Well With Cannabis Community have asked for healthier cannabis recipes — this vinaigrette ticks that box. Its bright, tangy flavor elevates simple salads, enhances grilled meats as a marinade, and makes a great bread dip.
This post outlines multiple infusion choices so you can pick the method that matches your preferences and ingredients on hand, plus suggestions for cannabis-forward salads to try with the dressing.
What You’ll Need

- ¼ cup lemon juice – freshly squeezed preferably
- ¼ cup white balsamic vinegar – lighter and less sweet than traditional balsamic
- 2 Tablespoons white wine vinegar
- ½ Tablespoon sliced scallion – use the white parts for this recipe
- ½ Tablespoon fresh grated Parmesan
- ¾ teaspoon sugar – granulated sugar or a cannabis-infused sugar if desired
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon Dijon mustard – helps emulsify the dressing
- ½ teaspoon minced garlic plus ⅛ teaspoon granulated garlic
- ⅛ teaspoon granulated onion
- ⅛ teaspoon crushed red pepper – optional, adjust to taste
- 1 cup extra-virgin olive oil
- ½ cup Bliss MCT Oil – optional infusion. Using this amount yields roughly 300 mg THC and 300 mg CBD for the entire 16-ounce batch (about 18.75 mg THC and 18.75 mg CBD per 1-ounce serving).
Note: A printable ingredient list and step-by-step recipe card are included below.
Dosing & Potency
If you use a pre-dosed infused oil like Bliss MCT, calculating the recipe’s potency is straightforward. Divide the total milligrams in the oil by the number of servings to estimate per-serving dose.
If you make your own infusion, use an edible dosage calculator to determine potency. If you’re new to edibles, consult a safe-dosing guide and start low and slow.

Storage Instructions
Keep the vinaigrette in a sealed container in the refrigerator for up to two weeks. Shake or stir before serving as separation may occur.

Alternate Infusion Options
There are several ways to infuse this dressing. Choose the method that best fits your experience level, equipment, and desired potency. You can combine methods to increase strength if desired.

Cannabis-Infused Olive Oil
Cannabis-infused olive oil is a light and versatile option that blends naturally into vinaigrettes. It’s my preferred choice for this dressing. Once prepared, infused olive oil works in a wide range of recipes.
Other workable oils include infused MCT oil, store-bought CBD oil, or homemade CBD/CBG oils depending on your goals.

Decarbed Cannabis Flower
Decarbed, ground cannabis can be treated like a spice in this vinaigrette. Be sure to decarboxylate your flower first to activate THC/CBD. Start with ½–1 gram of ground decarbed flower and adjust to taste and tolerance.
Leftover Cannabis Pulp
Leftover plant material from oil or butter extractions often retains cannabinoids. Adding 2–3 tablespoons of well-drained leftover pulp to the dressing is a great way to use it. An immersion blender will help smooth the texture so it blends seamlessly into the vinaigrette.
Cannabis Concentrates
Cannabis concentrates (distillate, CO2 oil, FECO/RSO, etc.) can be mixed into the oil component for a potent and easy infusion. Stir your chosen concentrate into the olive oil before emulsifying into the dressing. Check whether your concentrate requires decarboxylation based on its type.

Ingredients
- ¼ cup lemon juice
- ¼ cup white balsamic vinegar
- 2 Tablespoons white wine vinegar
- ½ Tablespoon sliced scallion white only
- ½ Tablespoon fresh grated Parmesan
- ¾ teaspoon sugar
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon Dijon mustard
- ½ teaspoon minced garlic
- ⅛ teaspoon granulated garlic
- ⅛ teaspoon granulated onion
- ⅛ teaspoon crushed red pepper
- 1 cup extra-virgin olive oil
- ½ cup Bliss MCT Oil optional infusion
Instructions
-
Combine lemon juice, white balsamic, white wine vinegar, scallion, Parmesan, sugar, salt, pepper, Dijon, garlic, granulated garlic, granulated onion, and crushed red pepper in a tall, wide-mouth container or mason jar.
-
Use an immersion blender to blend the ingredients until evenly combined.
-
With the blender running, slowly drizzle in the extra-virgin olive oil, then the infused oil (if using), to emulsify the dressing.
-
Blend for another 60 seconds until smooth and fully incorporated.
-
Store in an airtight container in the refrigerator for up to two weeks. Shake before using.
Notes
If you use the full ½ cup of Bliss MCT oil described above, the batch will contain approximately 300 mg THC and 300 mg CBD. Dividing by 16 ounces yields about 18.75 mg THC and 18.75 mg CBD per 1-ounce serving. Adjust amounts and serving sizes to meet your desired potency and tolerance.
Additional Infusion Tips:
- For decarbed flower, try ½–1 gram of ground decarbed cannabis in step one and adjust as needed.
- For leftover pulp, add 2–3 tablespoons in step one and blend well.
- For concentrates, mix your desired amount into the olive oil first, then proceed with step three so the concentrate distributes evenly.
