If you haven’t tried the Against the Grain gluten-free baguettes before, they were once a favorite for many because of their soft texture and cheesy flavor. However, recipes and brands change over time, so choose a reliable gluten-free baguette you enjoy.
My recommendation: Use your preferred gluten-free baguette or sub roll. I’ve had great results with Schar baguettes and Canyon Bakehouse sub rolls cut in half.
Ingredients You Will Need:
– Gluten-free baguette or sub roll: Schar or Canyon Bakehouse are good options.
– One head of garlic: Roast it with olive oil, salt and pepper until the cloves are soft and easily squeezed out. (If you’re short on time, garlic powder works as a substitute — see notes below.)
– Unsalted butter, softened: Room temperature and easily spreadable.
– Olive oil: For roasting the garlic.
– Sea salt & freshly cracked black pepper: To taste.
– Paprika: Adds warmth and flavor without heat.
– Garlic powder: For extra garlicky flavor, especially if not using roasted garlic.
– Freshly chopped parsley: For color and freshness; dried parsley can be substituted.
– Freshly grated Parmesan cheese (optional): A finishing touch that adds savory depth.
How To Make Gluten-Free Garlic Bread
If your baguettes are frozen, let them come to room temperature while the garlic roasts, or microwave briefly (30 seconds to 1 minute) to soften.
To roast garlic: Preheat the oven to 400°F. Slice the top off the head of garlic to expose the cloves, place it on a small piece of foil, drizzle with olive oil, and season with salt and pepper. Wrap the garlic in foil and roast for about 40 minutes, until the cloves are soft. Let it cool slightly, then squeeze the softened cloves out into a bowl.
Combine the roasted garlic with softened butter, paprika, garlic powder (if using), chopped parsley, and salt and pepper. Mash and mix until it forms a thick, spreadable paste. If you skip roasting, add 2–3 teaspoons (or more to taste) of garlic powder instead.



Slice the baguettes open and spread the garlic butter mixture evenly over each half. Sprinkle with grated Parmesan if you like.
Place the prepared bread on a sheet pan and broil for 5–7 minutes, watching closely, until the tops are golden and crisp to your liking. Remove, sprinkle with extra parsley if desired, and serve warm.

Ingredients
- 2 gluten-free baguettes, softened to room temperature
- 1 head of garlic
- ½ cup (1 stick) unsalted butter, softened to room temperature
- 1 tablespoon extra virgin olive oil
- Sea salt & freshly cracked black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ¼ cup fresh chopped parsley
- Freshly grated Parmesan cheese, for sprinkling (optional)
Instructions
Remove baguettes from the freezer and bring to room temperature, or microwave for 30 seconds to 1 minute until soft.
Preheat the oven to 400°F. Slice the top off the head of garlic to expose the cloves. Place on a small piece of aluminum foil, drizzle with olive oil, and season with salt and pepper. Wrap the garlic in foil and roast for about 40 minutes, until the cloves are soft. Let cool for 5 minutes, then unwrap and squeeze the softened garlic into a bowl.
Mix the roasted garlic with the softened butter, paprika, garlic powder (if using), parsley, and salt and pepper to taste until a spreadable paste forms.
Slice the baguettes open and spread the garlic butter evenly. Sprinkle with Parmesan if desired. Broil on a sheet pan for 5–7 minutes until golden and crispy. Serve warm and enjoy!
Notes
Garlic powder instead of roasted garlic: If you don’t have time to roast garlic, use an additional 2–3 teaspoons of garlic powder, or more to taste.
