- Preheat oven to 350°F (175°C). Prepare a 9×5″ loaf pan with cooking spray and parchment. Whisk together flour, baking powder, cardamom, and salt in a bowl. In a separate bowl, rub the sugar with the blood orange zest until fragrant.
- In a stand mixer fitted with the paddle attachment, beat the eggs, zest-rubbed sugar, and vanilla on high for 3–4 minutes until thick and pale. Slowly drizzle in the oil while mixing, then add the blood orange juice and mix until combined.
