Ingredients
- 2 cups graham cracker crumbs
- 6 tablespoons butter melted
- ¼ cup brown sugar
- Zest of 1 lime
- 2 egg yolks
- 1 14 oz can sweetened condensed milk
- Juice of 2 limes
- Juice of 1 lemon
- Zest of 1 lemon
Instructions

Place a rack in the center of the oven and preheat to 350°F (175°C). Butter a 9 x 12 inch pan and set aside.

Make the crust: In a bowl combine the graham cracker crumbs, melted butter, lime zest and brown sugar. Press the mixture firmly into the prepared pan, extending the crust about 1 inch up the sides. Bake for 7 minutes, then remove and let cool completely.

Make the filling: In a clean bowl beat the sweetened condensed milk on medium speed about 2 minutes until smooth. Add the egg yolks, lime juice, lemon juice and lemon zest. Beat just until combined, about 1 minute.

Turn off the mixer and scrape down the bowl with a spatula. Pour the filling evenly over the cooled crust and smooth the top.

Bake for 15 minutes, or until the filling is just set. Transfer to a wire rack to cool to room temperature, then refrigerate at least 2 hours to firm up. Use a sharp knife to cut into bars before serving.
