Heirloom Tomato Caprese Sandwich
Ingredients
- 5 assorted heirloom tomatoes, sliced
- 1 cup buffalo mozzarella, torn or sliced
- 1 bunch fresh basil
- 1 bunch watercress, washed
- 1 tablespoon pesto (adjust to taste)
- Your choice of bread (ciabatta, sourdough, or focaccia work well)
- Salt and freshly ground black pepper, to taste
- Optional: a drizzle of extra-virgin olive oil or a splash of balsamic vinegar
Directions
- Wash and dry the herbs and greens. Slice the heirloom tomatoes into even rounds and tear or slice the mozzarella so it’s ready to layer.
- Lightly toast the bread if you prefer extra texture. Spread about a tablespoon of pesto on one or both slices of bread to taste.
- Layer mozzarella on the bottom slice, then add a handful of basil leaves and a small pile of watercress. Arrange the tomato slices on top, overlapping slightly for even coverage.
- Season the tomatoes with a pinch of salt and freshly ground black pepper. If desired, finish with a light drizzle of olive oil or a few drops of balsamic vinegar for added brightness.
- Top with the remaining slice of bread, press gently, slice the sandwich in half, and serve immediately.
